Elegant potato soup
Melted butter, cream, onions, chives and Bouillon all help to produce a simple potato soup recipe that is easy to prepare and tastes great.

Ingredients:
2 tablespoons/ 40g butter
2 large potatoes, peeled and thinly sliced
2 medium onions, thinly sliced
4 cups/ 1 litre Basic Bouillon
salt and pepper
pinch or mace
1 ¼ cups/ 300ml scalded milk
1 teaspoon butter
2 tablespoons/ 40ml cream
chopped chives
Method:
Melt butter in a pan, add potatoes and onions, cover and cook over low heat for 8-10 minutes, stirring occasionally, do not brown. Add bouillon, salt, pepper and mace and bring to the boil. Reduce heat, cover and simmer for 15-20 minutes. Taste and adjust seasoning. Then stir in hot milk, butter and cream, beating to blend. Serve sprinkles with chives.
Cooking time: 30-35 minutes
